Biryani Masala Powder




Biryani Masala Powder is used in the preparation of Biryanis. Masala is the key ingredient which gives flavour to the Biryani. I used various masala's, each masala had its own flavour. My Biryani posts on Chicken Biryani ( Kacchi Biryani Style)Mutton Biryani ( Kacchi Biryani Style) and Vegetable Biryani has store bought masala, which also tastes good. This masala powder also has its own aromatic flavour.



To Make This Recipe, You'll Need :

Fennel Seeds
2 Tablespoons
Jeera (or) Cumin seeds
1 Teaspoon
Cloves
½ Teaspoon
Coriander Seeds
3 Tablespoons
Peppercorns
1 Teaspoon
Green Cardamom
5 to 6
Star Anise
2 Nos
Black Cardamom
3
Cinammon Sticks
2 to 3
Kapok Buds
1 Teaspoon
Mace
2 to 3 Nos
Stone Flower ( Dagad Phool)
Approx 1 Teaspoon
Nutmeg
1 (Crushed)
Kabab Chini
1 Teaspoon
Dry Red Chillies

Bay Leaf
2


(Wrongly Typed as Kabab Chini, It's Cloves)


                                                                     Method :

Firstly, crush the Nutmeg. Next, in a pan dry roast all the ingredients without burning ( You could roast the spices in 2 batches), cool the spices and grind it to a fine powder.


Cool It and grind it to a fine powder !!



Store the Biryani Masala in a Air tight container.

Chicken Pot Curry (Chicken Curry Cooked in a Clay Pot)




This Chicken Curry is one of my favorite. It consists of simple masala's yet tastes good. Back in the olden days, pots were the only help for cooking dal's, curries, rice etc.. People say, food cooked in the clay pots always tastes good. I must say its true after couple of  tries. When we cook food in the clay pots, the pot absorbs the excess oil and hence its healthy way of cooking our food. Meat gets cooked well and remains tender and juicy. Make sure you cure the newly bought clay pot before use. 
So lets start making Chicken curry in the clay pot!!






To Make This Recipe You'll Need : 


Chicken
500 grams
Oil
1 Teaspoon + 2 Tablespoons
Poppy Seeds
2 Tablespoons
Peppercorns
1 Teaspoon
Star Anise
2 (I used 2, but I recommend to use 1 )
Desiccated  Coconut Powder (or) Dry Coconut Powder
½ Cup
Onion ( Medium Sized, Chopped)

Tomato (Medium Sized, Chopped)
2
Ginger – Garlic Paste
1 Tablespoon
Red Chilli Powder
1 Tablespoon
Coriander Powder
1 Teaspoon
Salt

Oil and Salt.

  Method :

Begin by adding oil (1 Tsp) to a small pan and fry the Poppy seeds,Star Anise and peppercorns. (You could also dry roast the above ingredients which works absolutely fine.)
Next, collect them into a mixer, add the coconut powder, enough water and grind it into a fine paste.




 Now, heat oil (2 Tbspns) in the claypot, add chopped Onions, fry until it turns translucent, add chopped tomatoes followed by dry spices and ginger garlic paste. Mix well and cook until the onions and tomatoes forms like a gravy.


Now, add the chicken pieces followed by water as needed and cook until the chicken gets done. (About 15 to 20 mins on medium flame). Keep checking the chicken, so that it does'nt turn tough which generally happens when you over cook the chicken. Finally add the coconut + other spice masala paste and cook further for 5 mins.


Add more water if you want more gravy and cook for 5 minutes.
 Garnish with coriander leaves and serve.

Note : You could also use, 1 Teaspoon of Fennel seeds (Saunf) instead of  Star anise.

Spicy Chicken (Dry)


I enjoyed  this Spicy Chicken with white rice and dal. This is easy and simple way of making a chicken recipe.


To Make This Recipe, You'll Need :

Chicken
1.5 kgs
Onions
2 (Sliced)
Red chilli powder
2 ½ Tablespoons
Ginger Garlic Paste
1 Tablespoon
Coriander Powder / Dhania
1 Tablespoon
Salt  (I use Low Sodium Salt)
1 ½ Tablespoons ( or ) To Taste
Chicken Masala
1 Tablespoon
Lemon Juice
1 Tablespoon ( No Picture)
Oil
4 Tablespoons ( No Picture)
Cloves
5 Nos
Cinnamon
2 Sticks
Cardamom
2 Nos






Method : 
Begin by adding all spices and seasonings, lemon juice ( except the Star anise, cinnamon, cloves and cardamom) to the washed, cleaned and pat dried chicken pieces. 
Mix everything well (you could rest the chicken for half an hour). Next add oil to a pan or kadai, add the left over spices, fry them until they are swollen and add the sliced onions. Fry the sliced onions until they turn slightly brown in color. 




Now add the chicken pieces to the onions and cook until the chicken gets cooked ( with the lid covered. Keep stirring in between)  . It takes approx 30 minutes on medium flame. 


If you don't want your chicken slightly on the gravy side , then increase the flame and cook uncovered so that the water gets evaporated, Finally garnish with coriander.
