Coconut Snow Balls


It's Festive time and am glad to show you this simple and easy recipe. These Coconut Snow Balls aka Truffles are so easy to make. This is a Kid's friendly recipe. I made these balls in a simple way, you could stuff these balls with your choice of nuts or flavor with mint or orange peel. People who like coconut should definitely give this a try! 





To Make This Recipe, You'll Need : 


White chocolate
250 Grams
Desiccated Coconut
50 Grams + extra for rolling the balls
Vanilla Essence
1 Teaspoon
Heavy Cream/ Whipping Cream
75ml



Method :

Heat the cream in a saucepan until it reaches the simmering point, add it to the chopped white chocolate and mix well until it becomes smooth. To this add vanilla essence, coconut powder(50 grams), and mix well again. Refrigerate this coconut ganache mixture for about 1 hour or until it's firm to shape them. (I refrigerated it for the whole night) 
After refrigeration, remove and make it into equal size of balls and roll them in the coconut powder immediately.

Notes: 1. Chop the chocolate into fine chunks, so that they'll melt faster.
2.  If your chocolate has not melted and there is not enough heat in the cream, pop it into the microwave for 30 seconds to 1 minute. You may find the fat getting separated, at this point mix with a spoon swiftly and everything gets set. If you don't have a microwave, do it on the double boiler.

Fried Cookies/ Biscuits/ Cut out cookies



The making of these Fried cookies reminds me of my childhood days. These were prepared during the festive season in the month of December. These are some of my favorites which I'd prefer to munch on.  These cookies have got many names, some might even call these doughnuts. You could also make Kulkuls( shells) with this recipe. A few points to remember, fry on medium heat, otherwise, you'll end up with undercooked cookies. Also, the cooking time varies according to the thickness of the cookies. Do not add water while mixing the ingredients.
So let's start making these simple cookies!






To Make This Recipe You'll Need : 


All-purpose Flour/ Maida
2 Cups + extra if needed
Sugar Powder
1 Cup
Sooji Rawa/ Semolina /Bombay Rawa
2 Tablespoons
Eggs
2 Nos
Vanilla Essence
1 Teaspoon
Unsalted Butter
2 Tablespoons
Salt
1 Teaspoon
Oil
To deep Fry






and Oil( No picture)




Method : 

Begin by adding the butter, salt, and semolina to the flour. Rub the butter into the flour mixture. (Just like how we do it for the shortcrust recipes).


Now, beat the eggs until it goes pale. To the eggs add the sugar powder and beat well until it gets light and fluffy. Add the vanilla essence to the eggs and the sugar mixture followed by the flour mixture and make it into a Chapati/ Tortilla dough.


Roll out the dough, cut the shapes and deep fry them in the medium hot oil until the biscuits turn golden brown on the outside.


Dust the cookies with powdered sugar.

Notes: 1. If 2 cups of flour weren't enough to make the dough, add enough flour to form a good dough. 
2. Follow the measurements, not the quantities in the pictures. 
3.  I've used ground semolina (I put the semolina in a mixer and blended it into an even more fine texture)
4.  You could increase the sugar according to your taste.

Banana Bread/ Cake/ Loaf



This is a moist, soft, and delicious banana cake. I never got a no for this bread.. One could use a loaf pan, muffin cups, or a cake tin to make this recipe. I personally love the loaf way! One can substitute half of the All-purpose Flour / Maida with Wheat Flour for a healthy version of Banana Bread. Over ripen bananas are the best for this recipe. Here I have used chocolate chunks,you could substitute with your own choice of nuts, a combination of chocolate chips, etc. *Banana and chocolate, what a lovely combination ya!! 
I wanted to make 2 loaves of Banana Bread, since I don't have 2 loaf tins, I used a square cake tin for the second batch. To make 1 loaf of Banana Bread, measure half the recipe which is given below.


To Make This Recipe You'll Need:

Unsalted butter
226 grams
All-Purpose Flour/ Maida
3 Cups
Granulated Sugar
2 Cups
Baking Soda
1 ½ Teaspoon
Salt
1 ½ Teaspoon
Vanilla Essence
2 Teaspoons
Milk
½ Cup
Eggs
4 Nos
Banana Puree
6 Bananas
Dark (or) Milk Chocolate Chunks
1 ½ Cups (or) as needed







                                     

Method : 
Begin by beating the butter with sugar until well combined. To the butter-sugar mixture add the eggs one at a time and mix well. Also, add the vanilla essence and mix well.


Now, add the sifted flour( flour+baking soda+salt) slowly and mix well using a spoon/ whisk or spatula(if using a mixer), add the milk and mix, add the banana puree and mix well with the spoon /whisk or spatula. Now, switch to the mixer(if used in the previous process) and blend everything well. This should take about 1 minute. Do not over mix. Using the mixer is to ensure there are no lumps, less physical work, and less time consumption. If you're using a whisk/ Spoon or spatula from the beginning, continue with it.


Now add the chocolate chunks, mix well and pour in the prepared pans. 


Bake in the preheated oven at 160 degrees C for 1 hour. (I preheated the oven for about 7 minutes). The loaf tin took extra 15 minutes here. as I put both the tins. If you're baking only the loaf, then it would take 1 hour or until the toothpick comes out clean when inserted in the center. Remember, each oven's  functionality is different. Keep an eye on your bread while you bake. I baked this Banana Bread/ Banana Cake in the OTG Oven.

Notes : 
1. Follow the measurements, not the quantity in the pictures
2. Whisk the butter and sugar until the sugar gets dissolved.
3. If your bread starts browning dark in color on the top, cover it with aluminum foil after around 30 minutes.
4. New ovens get preheated quickly and cooks food quickly. So always keep an eye on the bread. Once you understand your oven's rhythm it's tension-free. Set the temperature, preheat, put the food, set the time, and bake!

Egg Fried Rice


Egg fried rice is a quick and easy recipe. One can make fried rice with leftover rice. Important things to be noted when making fried rice is to have perfectly cooked, non-sticky rice. So pre-cook the rice, let it sit in the open air, let the moisture get evaporated before making it. One can also use regular rice instead of basmati rice. This recipe has no specific measures, you could add all according to your taste. M.S.G (Monosodium glutamate china salt or tasting salt), Soy Sauce, and Plain Vinegar is supposed to go in with little quantity. You want the light flavor of them, not to overpower the dish. Many are worried about using the M.S.G. Using it in little quantities won't bring any harm. However, families who have kids below 5 years and pregnant women skip M.S.G in their diet. I  suggest you do the same though it's not proven scientifically!! So, let's get back to the recipe! 



To Make This Recipe You'll Need : 

Cooked  Rice

Eggs

Carrots

Green Bell Pepper / Capsicum

Cabbage

Salt

Pepper Powder

M.S.G

Soy Sauce

Plain Vinegar
Oil
Spring onions


























It's better to use Aged Rice. It expands more and does not stick. 





Taste while you cook, don't add seasonings accordingly to this picture. 



And Oil, Vinegar, Spring Onions ( No Pictures) 


Method : 

Begin by beating the eggs, on the other hand, heat the kadai or wok on a high flame, add around 3 tablespoons of oil ( coat the whole kadai or wok with the oil), let the oil heat up, and add the beaten egg mixture. Let it get cooked slightly and gently fold in the egg mixture as shown in the pictures below and gently scramble it. ( Now, you could season your eggs with salt and pepper )


Add, the veggies to the cooked egg quickly (work fast, your on high flame ) toss them for 1 minute, now decrease the flame to low, cook the veggies with the lid covered for about 2 minutes if you're not used to eating semi-cooked veggies. Next add the cooked rice, followed by salt, pepper, M.S.G, Soy sauce, and Vinegar. Toss well together (High flame again). Check for seasonings and serve !! 



Mix well, add spring onions ( my favorite) :) .... Serve !!!
