Simple Chicken Salad/ Chicken Salad/ Healthy Chicken Salad / Colorful Chicken Salad

 


A colorful platter of raw or cooked vegetables, grains, and proteins is a joy! Some might shun on a salad and I understand why. We grew up eating cooked food showered with various spices or masalas, deep-fried or sauteed sometimes. And especially a hardcore meatatarian finds it as an arduous task to finish his salad meal (including myself๐Ÿ˜ถ). To encourage or motivate me and fellow foodies to consume salads, I've added chicken to it ๐Ÿ˜‹.  I hope it will help you to eat a hearty rainbow meal! This worked for me.

So, why salads? why are they important? 
  1. Salads are nutritious, colorful and we know colorful foods are good for our health.
  2. They spend less time on the stove in case of cooked veggies, hence there's less nutrient loss.
  3. Nutrition supports health. In some cases, it may help fight early-stage diseases.
  4. Salads can be made wholesome.

When I was asked what did you have and I answered.... a salad.
 I get questioned back. Oho.. diet eh? ... See, if the diet is meaning to have something like consuming a bunch of healthy meals for a certain period of time....., then it's a No!
To be healthy, salads can be a part of it. But ultimately change in lifestyle is the recipe. 
Diet should not be a depressing term. 
You don't have to chuck off your regular foods.
Instead, eat with discipline, do not overeat, don't be greedy to gobble when you're served food, you need to feed your body in order to function, not your idea that it's free and you're still wanting it while you're belly full. To put it simply, eat when you are hungry๐Ÿ˜‡. 

The word 'diet' comes from the Middle English 'diete' from Latin 'diaeta' and from Greek 'diaita' which means the 'manner of living'... Diet is your way of life and the choices you make to nourish and feed your body ✌... 




To Make This Recipe, You'll Need : 

    • Bell pepper                       - 1 
    • Onion                                - 1
    • Carrot                                - 1
    • Tomato                              - 1
    • Chicken (boneless)           - 150g 
    • Iceberg lettuce leaves        - 4 to 5
    • Salt                                    - As required 
    • Pepper                               - As required
    • Extra virgin olive oil         - 3 TBSP
    • Lemon juice                       - 3 - 4 TBSP
    • Oregano                              - 1 1/2 tsp 
Method : 

1. To the chicken, add salt and pepper and marinate for 10 mins. 
2. Cook the chicken on medium flame until done. 
3. Now, make the vinaigrette, the punchy citrusy dressing. 
Add lemon juice, extra virgin olive oil, salt, pepper, and oregano, 
and mix well. ( taste and add the seasonings accordingly)
4. Now, in a bowl add all the chopped/ sliced veggies and add chicken. 
5. Add the dressing and mix well and serve immediately.

Notes:  1. So, I've pressed upon how healthy salads are.  However, it is not advisable to serve those who are sick or recovering from fever or other sicknesses as their digestive system wouldn't shoot up in breaking down the raw food. 
2. When consuming raw foods, make sure you wash the veggies thoroughly.  
3. You could add nuts, seeds as topping.
4. Taste as you go. Add seasoning accordingly. You can certainly include your choice of extra veggies or exclude them from the given recipe.

5. Chicken was cooked in garlic infused oil. You can sub by adding chopped garlic in your dressing. I'd prefer to add roasted garlic though.
6. As salads contain raw veggies, and chicken is involved in this recipe, it is wise to use different chopping boards to prevent cross contamination.
