Eggless Vanilla Cake


I've been trying to make Eggless cakes for many days. My cakes always failed especially when the recipe calls for the ingredient Milkmaid in large quantities. My cake always turned out to be a mess. After checking out this recipe by Chef Nita Mehta, I gave it a try and it came out good. Finally, am happy that I learnt to make the cake which contains Milkmaid. So, let's make some Eggless cake!!! 

To Make This Recipe You Will Need :


Milk (or) Water
1 Cup
All-purpose  flour
2 Cups
Condensed  milk
1 Can
Softened  butter
½ cup
Baking Powder
2 Teaspoons
Baking Soda
1 Teaspoon
Vinegar (optional)
1 Teaspoon
Vanilla Essence
2 Teaspoons




Method :
Begin by creaming butter and milkmaid in a bowl.
Next add milk, vanilla essence, vinegar, baking soda, baking powder to the creamed mixture and mix well.

  



After mixing all the ingredients, slowly add flour and mix well. 
Next butter the cake tin and bake it in a preheated (180 Degrees C) oven for 10 minutes. Reduce the temperature to 150 degrees C and bake it further for 15 minutes.
To know whether your cake is done or not, simply insert a toothpick in the cake. If the toothpick comes out clean then you're cake is done. 
Let the cake cool completely and run the knife around the edges of the cake, flip the cake tin over to unmould on a big plate. Cut and serve.





 As you can see, my cake top has over coloured. If you don't want this colouring on your cake, simply cover the cake tin with aluminium foil and bake for the first 10 minutes. Next, when reducing the temperature to 150 degrees C, remove the foil and continue to bake.

Eggless Chocolate Cake


This Eggless Chocolate Cake is very delicious and super moist.
In my experience, this cake tastes best after about 4 to 5 hours.


To Make This Recipe You will need :
  
All Purpose Flour
1 ½ Cups
Granulated Sugar
1 Cup
Water
1 Cup
Oil
¼ Cup
Cocoa Powder
3 Tablespoons
Vinegar (or) Lemon Juice
1 Tablespoon
Baking Soda
1 Teaspoon
Vanilla Essence
½ Tablespoon
Salt
¼ Teaspoon

  Method :



                       

Begin by sifting the all-purpose flour, baking soda, salt, and cocoa powder into a large bowl.


Take a separate bowl and add water along with sugar. Stir this mixture continuously until the granulated sugar dissolves in the water completely.
To the mixture of water and sugar, add Vinegar, oil, and vanilla essence.


Now add the wet ingredients to ingredients to the contents in the first bowl.


Now, mix well and pour the cake batter into a greased cake tin. I used a tin made with aluminum.


Preheat the oven to 150 degrees Celsius and then bake the Eggless Chocolate Cake for about 35 to 40 minutes.

Keep checking the cake after about 20 to 25 minutes because temperature settings in the oven vary from one another..


Remove the cake from the oven and insert a toothpick. If your
 toothpick comes out clean it indicates that your cake is done. 

If the toothpick  doesn't come out clean then bake it for further

 required  minutes

Choco Era Cups



To make this Recipe You'll Need:

Condensed Milk  -2Tbsp
Butter                 - 1 Tbsp
Milk Powder      -  2Tbsp
All Purpose Flour - 4 Tbsp
Baking Powder    -1/2 Tsp
Baking Soda        -1/2 Tsp
Cocoa Powder    - 1Tsp
Grated Chocolate - 2Tbsp
Milk(according to Consistency)  -30 to 40ml
Chocolate chips

Makes 3 to 4 Cupcakes

Method:
Mix all The ingredients with a whisk for about 1 to 2 mins.
Transfer the batter to cupcake Liners
Bake them in a Pre Heated Oven at 180degrees C  for 10mins..

*If Your Oven is a newly Manufactured Try using low Heat Setting instead of Using 180degrees
Some Ovens bake faster and some Slower... Keep an eye for every 5 mins...
Theyr done when toothpick comes out clean when inserted..


Vanilla Cupcakes Topped With Chocolate Ganache



To Make This Recipe You will need :

All purpose flour (Sifted)
 250 Grams
Powdered Sugar
250  Grams
Unsalted Butter
250 Grams
Baking Powder
5 Grams
Vanilla Essence
1 Teaspoon
Pineapple  Essence
½ Teaspoon
 Cream or Milk
50 ML
Eggs
5





Method :

Add butter and sugar powder to the cake mixer and mix it until everything is creamy
Add eggs one by one and beat until everything is well combined

 Add the cream followed by both the essences
After that, add the flour and baking powder (mix until everything gets combined, but do not over beat after adding the flour. Everything should get combined by 30
seconds. Switch off the hand mixer/blender and use a spatula)

Fill the cupcake liners till 3/4th.
Bake them in a preheated oven of 180 Degrees C for 10 minutes or until the toothpick comes out clean when inserted

* If you have a very new oven manufactured recently with updated settings and technology try selecting  150 degrees instead 180 degrees C

To make Easy Chocolate Ganache :

Chocolate (Chopped)
1 ½ Cups
Heavy Cream or cream
1 Cup
Vanilla Essence or any liquor
2 Teaspoons

Method :

Boil the cream and add chopped chocolate and stir it until whole chocolate is melted. Add Vanilla essence .


Finally glaze the cups cakes with ganache and top with sprinkles.

 Tips :
  • If a recipe calls for butter, substitute half quantity of butter with oil for softer cup cakes
  •  Ganache tastes best when consumed next day! 
  • If you want to make chocolate cupcakes use 220 Grams of flour and 30 Grams of cocoa powder
