Chicken Balls


Chicken balls are prepared in many ways in different cuisines. Some make plain chicken balls which has no crumb coating and the balls are deep-fried. Today I'm making my version of chicken balls using Indian flavorings. You can season this with your choice of flavorings too. Can also give Mexican twist by adding Mexican herbs. Feel free to adjust the taste according to your taste buds.


To Make This Recipe You Will Need : 

Minced  Chicken
200 Grams
Onion ( Chopped)
1 Medium Size (or) 1/3rd Cup of chopped onions
Carrot (Chopped or Grated)
1 (or) 1/3rd Cup Grated
Coriander
Half Bunch
Soy Sauce
1 Teaspoon
Red chilli Sauce
1 Teaspoon
Red Chilli Powder
1 Teaspoon
Turmeric  Powder
Less than ½ Teaspoon
Salt
To Taste
Ginger – Garlic Paste
1 Teaspoon
Corn Flour
1 Tablespoon
Corn Flour dissolved in water
1 Teaspoon of flour with 1 to 2 Tablespoons  of water
Cornflake Crumbs
As required for coating the balls
Oil
As required for deep frying the balls












Method : 

Begin by adding all the ingredients (except cornflour dissolved in water, cornflake crumbs, and oil which is for deep frying) to the cleaned, washed, pat dried minced chicken.



After adding the ingredients, make equal balls of the chicken, dip in cornflour dissolved in water solution, and roll them in the cornflake crumbs.


After crumb coating, all the balls, freeze the balls for 30 minutes.


After freezing the balls, rest them for 5 minutes on the kitchen counter and later fry them in preheated oil on medium-high flame for about 3 to 4 minutes.


Serve the chicken balls with your favorite dipping sauce.

Veg Nuggets


Veg nuggets are crunchy from the outside, flavorful from the inside. You can serve them during parties. The best thing about these nuggets is you can make them, crumb coat them and freeze them beforehand and fry them later when your guests arrive! You can use sweet corn and another choice of veggies in making these nuggets. Here for coating the nuggets I have used corn flakes crumbs, you can also replace them with dry bread crumbs or pressed rice  (poha) crumbs. You are free to adjust the seasonings. You can also Indianise by adding Indian spices. This is easy to make and delish too. so let's start making vegetarian nuggets!!!


To Make This Recipe You Will Need :


Potato (boiled & mashed)

Capsicum/bell pepper (finely chopped)
1 (big size)
Carrot (finely chopped)
1 (big size)
Classic All-purpose seasoning
1 Teaspoon
Parsley (Fresh or dried)
1 Teaspoon
Garlic cloves

Red chili powder
1 Teaspoon
Black pepper powder
1 Teaspoon
Garam masala powder (optional)
½ Teaspoon
Salt  
To taste
Paneer / Indian Cottage Cheese (Grated / Crumbled)
Small block
Amul processed cheese (Grated) (or) Mozarella small cube (optional)
1 whole cube (or) mozzarella cube in each nugget
Bread slices/bread crumbs
3 slices / ½ cup
Corn flour
1 to 2 Tablespoons
Corn flour dissolved in water
2 teaspoons in half cup of water
Cornflakes crumbs
As required
Oil
For deep frying


                                      









You could also use bread crumbs, to absorb any moisture 





Method : 

First, add the required amount of oil and saute crushed garlic, capsicum, and carrot so that the mixture will be moisture-free. 
After sauteing, let the mixture cool down, transfer into a mixing bowl. To the sauteed mixture add the mashed potato, and all the ingredients except oil which is for deep frying, cornflour dissolved in water, and cornflake crumbs.






After mixing everything, take a tablespoon of the veggie mixture and give it a nugget shape.
Next, dip the nuggets in the cornflour dissolved in water and coat it with cornflake crumbs. Repeat the same process until the whole mixture gets completed.
Freeze the nuggets for half an hour, remove from the freezer and rest for 5 minutes before deep frying them on high flame. 




Vegetable nuggets are ready to serve!

Soy Chunks - Meal Maker Balls


 These Soy chunks or Meal Maker is easy to cook. It contains protein and has no fat in it. These chunks are also used in making the pulaos, vegetable curries, etc. It is also called as Soy meat as it tastes like meat. This Soy Chunk snack recipe is easy to make and tastes good too. You can freely adjust the flavorings and seasonings according to your choice. So, let's start making some cheating meatballs :p

To Make This Recipe You Will Need :


Soy  Chunks
200 Grams
Red  Chilli  Powder
1 Tablespoon
Coriander  Powder
1 ½ Teaspoon
Salt
1 Teaspoon (or ) To taste
Ginger  garlic  paste
1 ½ Tablespoon
Garam  masala
½  Teaspoon
Chicken  masala
½  Teaspoon
Besan
2 ½ Cups ( or ) as required
Water
As  required
Oil
As  required  to  deep  fry the balls
Red food colour
Pinch (optional)


           




Method : 
 Soak the Soy chunks in the water for about 30 minutes. 
After 30 minutes, the hard Soy Chunks become soft. 
Squeeze out the water from the soy chunks and add all the spices.


*** Squeeze out  85-90% of water. Do not squeeze out the water completely because it may give a dried effect.

Now make a smooth but thick besan batter and add color* (optional)*
Dip the Soy Chunks in the besan batter and fry them in the oil for 2 to 3 minutes or until done. 



And You're done!


***  You can also boil the Soy Chunks, squeeze, dip in the batter and fry.
