Chapati Laddu/ Chapati Laddoo/ Chapathi Laddoo


If you have leftover chapatis, the sweetest alternative is to make these laddus. It's easy to make and they are ready in under 10 minutes. Yes, you could adjust the sugar according to your taste. 


To Make This Recipe, You'll Need : 


Chapati
5 Nos of chapati cut into pieces
Sugar
½ Cup (or) As per taste
Ghee/ Clarified Butter
2 Tablespoons
Green Cardamom/ Elaichi  Powder
½ Teaspoon
Salt
A Pinch
Coconut Powder (Optional)
½ Cup



Method : 

1. Add all the ingredients to the mixer jar and make a powder of it.
2. Next, add the ghee and form the laddus using your hands.
3. What next? Have it and share it :)

Coconut Burfi/ Nariyal Burfi/ Desiccated Coconut Burfi/ Kashata/ Coconut Candy/ Thengai Burfi/ Coconut Fudge


I happen to love coconut for its sweet and crunchy texture it adds to any dish. I have tried few recipes on Coconut and this is one of them. If you're a Coconut lover make sure you check  Coconut Snow Balls. I hope you will like them. This is a very simple recipe, can be done in under 10 to 15 minutes. This recipe is given to me by my aunt.

To Make This Recipe, You'll Need :


Desiccated  Coconut  Powder
2 Cups
Milk Powder
1 Cup
Sugar
½ Cup (or) Slightly more than 1/4th cup for mild sweetness
Water
1/3rd Cup
Green Cardamom Powder/ Elaichi
½ Teaspoon
Ghee/ Clarified Butter
As required  to  grease the tray or a plate



Method: 
1. Grease the tray or plate with the ghee
2. Add sugar and water and cook until the solution becomes slightly sticky and thick. Remember, we are not waiting for 1 string consistency. Think of honey instead. 
3. Meanwhile, mix the desiccated coconut powder, milk powder, and cardamom powder until well incorporated.
4. When the sugar syrup is ready, add the mixed powders and mix well. 
5. Transfer this mixture onto the greased plate and evenly spread the mixture. 
6. Cut the burfi into desired shapes when it gets cooled.

Chocolate Pudding/ Creamy Chocolate Pudding/ Eggless Chocolate Pudding/ Easy Chocolate Pudding/ Chocolaty Pudding




This classic chocolate pudding is perfect for party time. When it comes to the Puddings, they are of two kinds. It could be either sweet or savory. Some sweet puddings are set with gelatin or agar agar, corn starch, and some are steamed. I've tried making puddings using the Agar Agar strands, have a look at it,Vanilla Pudding and Papaya Pudding. They are delicious and they get set very quickly! Give it a try and let me know how it turned out for you. I followed the Chocolate Pudding recipe from hereIt's easy to make and yummy for your tummy. Make this Pudding and enjoy it with your pals. 



To Make This Recipe, You'll Need : 

Whole Milk/ Full Cream Milk/ Full Fat Milk
500 ML
Rice Flour
1 Tablespoon
Corn Starch
2 Tablespoon
Vanilla Essence/ Extract
1 Teaspoon
Salt
1/4th Teaspoon
Chocolate (Finely Chopped or Chips)
50 Grams
Cream/Whipping Cream/ Heavy Cream
3 Tablespoons
Cocoa Powder
2 Tablespoons
Granulated Sugar
100 Grams





Method : 

Add all the ingredients to a saucepan and cook until it starts bubbling ( Chocolate should be melted, Custard consistency on medium heat). You should keep stirring the mixture continuously to combine all the ingredients well and not to form any lumps. Once everything is well combined and slightly thickened (it should coat the spoon or spatula)
 pour it into the serving moulds and let it set. Serve chilled. 




Serve Chilled with choice of nuts , fruits or whipped cream.




Notes : 
1. Cover the Puddings with Plastic wrap to avoid skin formation on the top.

Papaya Pudding/ Agar Agar Papaya Pudding/ China Grass Papaya Pudding/ Kanten Papaya Pudding/ Diabetic Friendly Papaya Pudding


Papaya is a rich source of antioxidants and nutrients. My dad consumes papaya daily, it's his favorite fruit. It lowers cholesterol, helps in weight loss, boosts up immunity, good for diabetics(recommended by doctors), good for digestion, helps in preventing cancer,etc. So, I combined the fruit of the angels with agar agar instead of full fat creams or pate bombes. So, this pudding is a healthy one I can say! Diabetics can also consume this papaya pudding. 

PS: Not recommended for pregnant women.


To Make This Recipe, You'll Need : 


Papaya Puree
200 ML
Agar Agar/ China Grass
3 Grams
Water
½ cup (or) enough to soak the Agar Agar


 How I made my papaya puree?
I Cut the papaya in half, removed the seeds, whitish layer, and the skin. Cut into cubes and blended into a puree by adding a few spoons of milk. You could also add water. Now, check the taste. Add sugar if needed( I suggest you add because the puree tastes slightly bitter)Now, diabetics should add sugar-free powder in this case.

Coming to the Preparation Method :
1. Soak the agar agar in water for 10 minutes.
2. After 10 minutes, melt the agar agar on the low flame until you see a clear liquid.
3. Add the melted agar agar to the papaya puree and bring it to a boil. Whisk well and switch off the flame. 
4. Pour the pudding mixture into the moulds and refrigerate until set.
5. Top it with whipped cream (optional). If still any bitter taste dominates, whipped cream on the top balances it. 

Refrigerate until set. Top it with whipped cream.

Vanilla Agar Agar Pudding/ Vanilla Pudding/ Vanilla Kanten Pudding


A scrumptious pudding is the best way to finish your meal. This pudding is easy to make and it's delicious. The pudding sets very quickly, this will save your day! I made this pudding with my Homemade Condensed Milk. It came out perfect. Do check the recipe, give it a try and let me know how it turned out for you. I also made Vanilla Ice creamLeche Flan with the HCM. I'm in love with this Pudding!




To Make This Recipe, You'll Need : 


Milk
500 ML
Condensed Milk
400 Grams
Vanilla Essence/ Extract
1 Teaspoon
Agar Agar/ China Grass
6 Grams
Water
3/4th Cup








Method : 
First, soak the china grass in water for about 10 minutes. Next, to a saucepan add the milk, condensed milk, vanilla and bring to a boil. Switch off the flame and set it aside. 
Now, take the soaked Agar-agar and melt it on low heat until you see a clear liquid. 
Add the Agar-agar liquid to the milk and whisk well. 
Strain this mixture and pour it into your desired moulds and refrigerate it until it gets set. For the quick setting of the pudding, place it in the freezer for about 15 minutes. 



Refrigerate until set or freeze for about 15 minutes. 
If you're using Steel/aluminum moulds, better to grease on beforehand with the unflavored oil.

Delicious Vanilla Pudding is Ready !!

Chocolate Popcorn


"Anything is good if it's made of Chocolate"
                                                     - Jo Brand.
So true! These salted Popcorns dipped in the Chocolate is sapid. When there is no time and you need quick chocolaty stuff for the party, this is the recipe!! All you need to do is stock up your pantry with the dried corn kernels(if you want to make homemade popcorn) and dark chocolate for this easy peasy yummy treat. Check out the homemade Popcorn here . You could also drizzle over some caramel too. Salty-Chocolaty-Bittery. Oh, Yummm!  


To Make This Recipe, You'll Need : 

Salted Popped Corn
As required
Melted  Dark Chocolate
As required
Sprinkles (Optional)
As required

                               


Method : 

To the Popped Corn add the melted chocolate (the popcorn should get coated well), give a gentle mix. Now, spread the Chocolate coated Popcorn on the foiled tray(or) plate. Add the sprinkles and freeze them for about 10 minutes. 


After, 10 minutes, remove and serve. It's painless, Is'nt it?? I shared this with the kids and they loved it. Do give it a try. Also, try adding the caramel and enjoy with your pals.

Leche Flan/ Caramel Custard/ Caramel Pudding/ Creme caramel


Leche Flan is the Filipino version of the Caramel Custard. This egg-based dessert is topped with soft caramel. It's made using only yolks, condensed milk, evaporated milk, while the Creme Caramel/ Caramel pudding (USA Versions) are made with whole eggs and regular milk. In my opinion, the Filipino version is rich, dense as well as creamy. This recipe was given to me by my friend who flew to the Philippines for her studies. Thank you Varsha, This is damn yumm :).    




To Make This Recipe, You'll Need : 

Egg Yolks
6 Nos
Condensed  Milk
300ml
Evaporated  Milk
180ml
Vanilla
1 Teaspoon
Granulated  Sugar
4 Tablespoons
Water
2 Tablespoons

Note: Read the complete post to know how I made my own evaporated milk, condensed milk and about how I steamed my Leche Flan.


Method : 

To the egg yolks, add the condensed milk (I used homemade condensed milk), gently mix well


Next, add the evaporated milk, give it a gentle mix, finally add the vanilla and give it a gentle final mix.


Now, add the sugar and the water to the flan mould and begin to heat it on the stove to make a soft caramel.


Now, place a strainer over the flan mould and strain the prepared custard mixture into the mould. Cover the custard-filled mould with the aluminium wrap and steam it for 45 minutes or until the custard is set. (Make sure you have enough water to steam the flan)


After 45 minutes, I unwrapped the foil and this is how it looked!


I allowed it to cool down completely, covered it with the plastic wrap and refrigerated it for 3 hours.
To unmould the flan, I put the mould in the hot water for 2 minutes(enough water to cover the bottom half of the mould), loosen the edges of the flan by running a knife around and inverted on the serving plate.  

I made my own evaporated milk instead of the canned product.
Here's How: I boiled 500ml (Half Litre) of milk on the low flame until it reduced to 300ml.  It's done! (use room temperature when adding to the egg yolks)
I also made my own condensed milk instead of the canned product.

How I steamed my flan using The Indian Pressure Cooker?
I  filled 1/4th of the pressure cooker with water and brought it to a vigorous boil. Next, I placed a stainless steel colander and placed the flan in it. Finally, I covered it with a lid.


I covered it with the lid but missed the click.
