Madtongsan/ Korean Fried Peanut Cookies/ Sticky Korean Fried Cookies




So, I made these cookies after watching Maangchi's Youtube channel. She is a sweet, cute, and super active youtube chef teaching South Korean food since 2007. Coming to the cookies, these are first fried in the oil until they get nice golden brown, and next they are baked in the oven for a few minutes. This way the cookies stay crunchy. Finally, they are tossed in the sticky sauce and coated with peanuts.  It reminds me of Twix bar and snickers. If you have already tried these cookies, did you also go into the chocolate zone? To Make This Recipe, You'll Need :


Egg
1
Sugar Powder
1/4th Cup
Salt
1/4th Teaspoon
Oil
1 Tablespoon + For Deep Frying
Vanilla Essence
1 Teaspoon
All-Purpose Flour / Maida
1 Cup 
Baking Powder
1 Teaspoon

To Make the Sticky Glaze : 


Rice Syrup or Light Corn Syrup
1/4th Cup
Sugar
2 Tablespoons
Water
2 Tablespoons
Roasted Peanuts (Chopped)
1/4th Cup





                                                     Method : 
1. First begin by adding an egg, sugar powder, vanilla, oil(1 Tablespoon/no pic in the collage), and salt to a mixing bowl and mix everything until combined. 
2. To this add the flour, baking powder mix well until it forms a dough.


3. Cover and rest this dough in the refrigerator for 30 minutes.
4. After refrigeration of the dough, take a little amount of dough, make a log and start rolling into a thin rope. Cut these dough ropes 2 inches long pieces.
5. Heat oil moderately and fry these dough ropes until they turn golden brown (Fry on low flame only) 

6. Now preheat your oven to 200 degrees Celsius for 10 minutes and bake these fried cookies in the oven for about 7 minutes. 
All ovens are not the same, so keep an eye on them not to burn your cookies. Once your cookies are out of the oven, next it's time to coat them in the Sticky Glaze.

Making the Sticky Glaze: 

1. Add Light corn syrup, sugar, and water to a saucepan, turn on the stove and wait until it thickens up and get one thread consistency. (Do not use your spoon to stir this glaze mixture while the sugar is melting). 
2. When the glaze starts to bubble, now insert the spoon and check for the thread consistency. Once the glaze is ready, add the fried-baked cookies and toss well and finally add the chopped/ crushed roasted peanuts and toss well again. (I used plain peanuts, not salted ones)
3. Transfer on a baking sheet and spread on it so that they don't stick to each other. Once they are cool, you are ready to munch on the Korean Cookies, Madtongsan!!

Fried Cookies/ Biscuits/ Cut out cookies



The making of these Fried cookies reminds me of my childhood days. These were prepared during the festive season in the month of December. These are some of my favorites which I'd prefer to munch on.  These cookies have got many names, some might even call these doughnuts. You could also make Kulkuls( shells) with this recipe. A few points to remember, fry on medium heat, otherwise, you'll end up with undercooked cookies. Also, the cooking time varies according to the thickness of the cookies. Do not add water while mixing the ingredients.
So let's start making these simple cookies!






To Make This Recipe You'll Need : 


All-purpose Flour/ Maida
2 Cups + extra if needed
Sugar Powder
1 Cup
Sooji Rawa/ Semolina /Bombay Rawa
2 Tablespoons
Eggs
2 Nos
Vanilla Essence
1 Teaspoon
Unsalted Butter
2 Tablespoons
Salt
1 Teaspoon
Oil
To deep Fry






and Oil( No picture)




Method : 

Begin by adding the butter, salt, and semolina to the flour. Rub the butter into the flour mixture. (Just like how we do it for the shortcrust recipes).


Now, beat the eggs until it goes pale. To the eggs add the sugar powder and beat well until it gets light and fluffy. Add the vanilla essence to the eggs and the sugar mixture followed by the flour mixture and make it into a Chapati/ Tortilla dough.


Roll out the dough, cut the shapes and deep fry them in the medium hot oil until the biscuits turn golden brown on the outside.


Dust the cookies with powdered sugar.

Notes: 1. If 2 cups of flour weren't enough to make the dough, add enough flour to form a good dough. 
2. Follow the measurements, not the quantities in the pictures. 
3.  I've used ground semolina (I put the semolina in a mixer and blended it into an even more fine texture)
4.  You could increase the sugar according to your taste.

Doggy Face Cookies



 Preparation Time: 35 Minutes

To Make This Recipe You will need :
  
All-purpose flour (Maida)
200 grams
Powdered Sugar
50  grams
Butter (Unsalted)
125 grams
Water
1 to 2 Tablespoons
Vanilla  Essence
1 Teaspoon
Chocolate  Strands
For  eyes
Chocolate Chips
For nose
Chocolate Cereal (Kellogg's Chocos)
For ears


Method :
To a mixing bowl add butter, sugar, and all-purpose flour and mix it well until everything is well combined.
Now add in the Vanilla essence and mix well..
At this point, the whole mixture looks crumbly.. 
Next, add in the water and knead it into a soft smooth dough for about 1 minute.


Make small cookie balls from the dough and make doggy's eyes with chocolate strands, nose with chocolate chip, and ears with chocolate cereal ..

Making the Doggy Face in 5 Easy Steps :

Step 1 - Put in one eye

Step 2 - Eye number 2 is in place

Step 3: Chocolate Chip nose 

Step 4: The left ear of the Doggy is in place


Step 5: Both the ears are in place


Grease The Baking tray with Butter or Oil

Ready to bake!!
 Bake them in a preheated oven of 170 degrees Celsius for 15 to 20 mins.

Chocolate Chip Cookies



For This Recipe You'll Need :

All Purpose Flour  - 1 Cup
Butter (melted)      -  1/2 Cup
Powdered Sugar  - 1 Cup
Chocolate Chips  - 1 Cup
Soda                   -1/2 Tsp
Baking Powder   -1 Tsp
Egg                     -1
Vanilla Essence   -1/2 Tsp

Method ;
First beat the egg
Next add in the butter and the sugar and beat well
To this add in the rest of the ingredients one by one and mix it (electric mixer with dough hook)
Now if your cookie dough is too sticky just add little flour to harden it ...
Next make small balls of the dough and place it on a greased baking tray
and bake them in a preheated oven at 180 Degrees C for 9 mins...
The dough balls will get flatten all by their own..
Cookie may seems to be little soft after removing from oven but, will harden as they cool.

But always keep checking in intervals because Every oven is not same.. Gain the knowledge on mastering your oven and understanding the heat settings according to the food you cook.

* Always place cookie raw dough balls far from one other because they get flatten as they get baked and cooked.
Cool your cookies and store them in a airtight container
